Simply Decadent Plum Crumble

I love, love, love plums…so, I relish the fact that I get to eat endless amounts this time of the year, even if just for a few short months. I typically eat plums raw, as a healthy snack, but I decided to spice up my plum obsession this summer and create some different recipes.

plum2I’m not much of a baker, so I deliberately stick to easy, throw everything in a baking dish, desserts…this one is no exception. Simple and decadent.

The Plum Mixture
3 cups of chopped plums, skin on, I used a mix of black and red plums
Juice of 1 lime
Splash of vanilla extract

Mix all plum mix ingredients together and put in your baking dish of choice…casserole dish, ramekins, loaf pan…whatever.

The Crumble Mixture
¾ cup of brown sugar
¾ cup of gluten-free flour
½ cup of chopped pecans
¼ stick of cubed, cold butter
1 teaspoon of cinnamon
1 teaspoon of nutmeg

Mix all crumble mix ingredients together and place on top of the plum mixture in the baking dish. Bake on 350° for 25-35 minutes. When done, the plum juices should be released and migrating up to the top of the crumble and the crumble mixture should be cooked through.plum5Serve warm with your icy/creamy topping of choice. I topped mine with unsweetened almond milk ice cubes that I froze in my adorable pineapple ice tray.
